Basic Blackjack Strategy
The basic strategy consists of only hitting if you have 16 or less. Obviously what the dealer has will affect your decision. If you have 16 and the dealer has a 4 it will be very likely the other card will be a 10, the dealer will have to hit on 14 and could go bust with an additional 10 value card. In this situation you may want to stand on a 16 rather than hit.

Do not take insurance, even if you have a blackjack. Card counters can get away with making smart insurance bets when the deck is rich in tens but the non-counting player should always decline it.
Card Counting
Card counting is a way to over a long period of time make a considerable amount of profit. The problem is it can be very difficult to master and any errors can result in big losses. On top of that casinos will be aware of players trying to count cards and you can get red-carded and banned from many casinos for this.
The main principle of counting cards is to simplify the probability of winning by categorizing the cards and their values. If the remaining deck has a high number of 10 value cards or aces it is good, and high number of low values cards it is bad.
There are various ways to do the ‘counting’ part. Each card is given a (+1), (-1) or (0) depending on their value for cards 2,3,4,5, (+1), cards 6,7,8,9, (0) and cards 10,J,Q,K,A, (–1). The counting then is continuous throughout game-play (the running count), where the higher your number the more you bet due to the chances of good cards being higher, the lower your number the less you bet due to the chances of bad cards being higher.
There are several other ways of counting cards and being aware of certain things, for example aces available. Usually when casinos employees realise you are counting, they will either shuffle the cards whenever you increase your bet (removing any advantage), or ask you to leave.
